Autumn at last


1 point for Durham - good Farmer's Markets!
We should have just left the eggplant on the table;
it was much prettier there.
I'll leave the eggplant recipes to the experts.

Oh my, those look delicious! Eggplant is great chopped up and sauteed with some olive oil, salt and garlic. It's great with chicken. I warn you though, it shrinks like crazy so go a little larger than bite size pieces.

It's also good in an eggplant parmesan which even I was able to make. And it's good in sauteed and used in thai food dishes. We grew eggplant in our garden this year and are going to do it again next year also.

thanks! Maybe I'll give it another go and sautee it next time - we baked it with zucchini and tomatoes and it was too slimy for me.
